Okay, so this sauce is not only super easy to make, it's also super delicious and very versatile. I usually make a big batch of it and portion it out. Some is smothered over chicken breasts as a marinade for dinner, some goes in a bowl – the kiddos snag that right away with some fresh corn ships as a snack and some is stored in the fridge for another day. Use as a marinade, spread, or a dip. This also makes a great dressing for a salad, just thin the sauce out with a little extra virgin olive oil or water.
Pulse all ingredients together in a food processor except for the pistachios until well incorporated.
Add the pistachios and pulse until smooth.
