This is one of my favorite breakfast recipes. A delicious protein-packed way to start your day!
Ahead of time prepare the taco turkey and refried beans so you can simple add them to your breakfast in the morning. Click on the link to view the recipes.
Measure out ½ cup of egg whites. Crack a whole egg in with the egg whites and beat until combined. Add salt and pepper to taste.
Heat ¼ tsp olive oil in medium sauté pan over medium high heat. Add zucchini and salt and pepper to taste. Cook for 3-5 minutes stirring occasionally to keep zucchini from burning. Once the zucchini is tender, remove from heat and plate.
While zucchini cooks, heat small sauté pan over medium high heat. Add ¼ tsp olive oil and use spatula to spread around pan to ensure it coats the bottom completely.
Add the eggs and taco turkey, stirring frequently until cooked.
Next to or on top of the zucchini, add your egg and turkey. Add 3 ounces (1/3 cup) of refried beans (heated separately) and 1 tablespoon light sour cream. Enjoy as is or with 1-2 slices dry whole wheat toast.
