Soup is a great way to repurpose leftover turkey! This recipe also uses the turkey bones to create a delicious broth rich in minerals and flavor. Switch up the veggies and even add noodles for a tasty homemade soup your family will love!
1tspfresh chopped rosemaryremove stems; or a pinch of dried rosemary

Bone broth:
1large onioncoarsely chopped
6cloves garlicsmashed

Bone broth:

Place turkey bones and giblets in the largest pot you have. Add all ingredients, fill water to about 2-inches from the top of the pot, and bring to a boil. Reduce heat to medium-low and simmer for 8-10 hours.

Discard bones and other large pieces and strain broth through a fine-mesh strainer into a large container (pot, bowl, pitcher, etc.). If you don't have a strainer, a colander will work too.
Soup:

Place a large pot on the stove over medium-high heat. Add oil, garlic, onion, carrots and celery. Cook for a few minutes until onion is tender and translucent.

Add ginger, turmeric, kale, rosemary and thyme. Stir to incorporate.

Add turkey pieces and fill the pot with your freshly made bone broth. Taste and season with salt and pepper as needed. Simmer uncovered for 20-25 minutes.

Taste, adjust seasonings, and enjoy!

You can substitute any of the veggies based on what you have on hand.
If you have leftover bone broth, let cool, pour into freezer bags (double up just in case) and freeze for up to 6 months.
