Mexican Pulled Pork
Pulled pork can be a delicious and healthy meal by using pork tenderloin, a lean cut of meat. Pork is also a terrific source of B vitamins, iron and protein. Cooked in a slow cooker or crock pot and spiced up with some Mexican flavor, this dish makes perfect street tacos, enchiladas, salad topping, and more.
Place pork tenderloin in slow cooker. Sprinkle with taco seasoning. Do not add any liquid. Cover and cook on low heat for 7-8 hours. Cooking time may vary, pork is fully cooked at 145 degrees but may need to cook a little longer to shred easily.
Discard any liquid and visible fat. Shred with forks or hand mixer. Add enchilada sauce and green chilies. Still to combine completely.
Add to tacos, burritos, salad, or serve alone with vegetables and serving of complex carbohydrate.
