Homemade Cheese Crackers

Looking for a good cracker to go with your cheese and meat board can be difficult. Skip the grocery store and make this recipe! This is the tastiest and easiest cracker you can make in no time flat. Add a fig spread on the side and you’re all set! Hosting a party? These cheese crackers are a perfect scratch-made addition!

 8 oz gruyere cheesegrated
 1 cup all-purpose flour
 4 tbsp cold buttercut into pieces
 ½ tsp salt
 ½ tsp pepper
 3 tbsp ice water

Put the Gruyere, flour, butter, salt and pepper in a food processor and pulse until the mixture resembles sand. Add the ice water and pulse until the dough comes together. Form the dough into a ball, wrap in plastic and refrigerate for 30 min.

Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.

Roll out the dough to 1/8-inch thickness and cut into squares with a pizza cutter. Use a wooden skewer to poke a small hole in the center of each square. Transfer to the prepared baking sheet and bake until golden brown, 15-17 Minutes (rotate half way through). Allow to cool before packing up.

Crispy Roasted Chickpeas

If you are looking for a healthy snack alternative that still has the crunch and flavor you love, try making these super simple roasted chickpeas. Not only are these little legumes packed with protein and nutrients, they are packed with fiber and low in fat!

Ingredients

15 oz can of chickpeas
1 tsp olive oil
¼ tsp salt
¼ tsp garlic powder
¼ tsp chili powder

Directions

Preheat oven to 400F. Grab a baking sheet and spray with non-stick spray.

Drain and rinse a 15oz. can of chickpeas/garbanzo beans. Thoroughly pat dry. Discard any skins that are removed as you dry them.

Layer beans out on baking sheet. Bake for 15 Minutes.

Rearrange beans on sheet by gently shaking the sheet (using oven mitt). Bake until browned, about 15-25 Minutes.

Transfer beans to a medium bowl. Drizzle olive oil and seasoning over beans and toss to coat.

Let cool before serving and enjoy!

NOTES: If you like snacks spicy, add cayenne powder to taste.

Oatmeal Energy Bites

These energy bites make for a perfect mid-day snack for all ages.

Ingredients

2 cups oats
cup maple glazed pecans
½ cup maple syrup
cup mini dark chocolate chips
½ cup dried cranberries
½ cup naturally no-stir peanut butter (may need to adjust amount as you mix together – depending on what brand you use)
1 tsp cinnamon
1 tsp vanilla extract

Directions

Use a blender to grind the maple glazed pecans and transfer to a mixing bowl.

Add oats, chocolate chips, dried cranberries, cinnamon, and mix.

Add peanut butter and stir.

Add half of the vanilla and maple syrup and mix well. Add remainder of liquids as needed until batter thickens.

Chill batter in fridge for 20-25 Minutes.

Roll into 1-inch balls and place on a cookie tray with parchment paper underneath.

Place trays in freezer for 20-30 Minutes and transfer into a Ziploc bag and label.
